Jester King Boxer's Revenge Barrel-Aged Wild Ale Coming 9/27

Our latest blend of Jester King Boxer's Revenge Barrel-Aged Wild Ale will be available for purchase this weekend at our brewery. Sales will begin when we open on Friday, September 27th at 5pm. Bottle sales will be limited to six per customer. We’ll also have our latest blend of Boxer’s Revenge available to drink by the glass here at Jester King. For now, Boxer’s Revenge will only be available at our brewery and at various upcoming special events. Our tasting room is currently open on Fridays from 5-9pm, and Saturdays and Sundays from 12-6pm.

Boxer’s Revenge is one of a number of beers we make through extended fermentation in oak barrels with numerous strains of wild yeast, including several we cultivated from our ranch in the Texas Hill Country. Over the course of many months, each oak barrel ferments a little differently due to the wild organisms in the beer. We then select barrels to blend based on their individual flavor and aroma characteristics. In some cases, we’ll select oak barrels from different batches to help create a harmony of flavors. For our latest blend, we selected fifteen oak barrels, which equates to about 350 cases of Boxer’s Revenge (750ml x 12). 

Boxer’s revenge is 10.2% alcohol by volume, has a finishing gravity of 1.003, and is 3.3 pH. It is made from Hill Country well water, organic malted barely, organic malted wheat, hops, Farmhouse yeast, Brettanomyces yeast, souring bacteria, and naturally occurring wild yeast from the Texas Hill Country. Like all of our beers, it is unfiltered, unpasteurized, and 100% naturally conditioned.
