You can’t talk about barrel-aging without mentioning one of the pioneers in the process, New Holland Brewing. You also can’t mention New Holland and barrel-aging in the same sentence without thinking of their Dragon’s Milk line of barrel-aged beers.

While most people associate barrel-aging and even Dragon’s Milk with dark imperial stouts, I’m here to say it’s time to change your thinking.

Today we’ll be sampling New Holland Dragon’s Milk White, and if the name doesn’t give it away, it’s a decidedly light-colored beer. Now don’t get me wrong, this beer is still a stout and it is definitely Bourbon barrel-aged, but the beer itself is a white stout and not the traditional midnight-black stout.

The color and look of this beer may fool your brain, but it won’t fool your palate. Of course I’m anxious to give it a try, so off we go.

ABV:  6%
IBU: 35
Style:  White Stout
Packaging:  12oz cans
Appearance:  Bright golden amber
Aroma:   Sweet vanilla & coffee
Mouthfeel:   Medium
Taste:   Milk chocolate, sweet vanilla, caramel, rich coffee & Bourbon.
Overall:  The look of this beer will fool your brain a bit since the color doesn’t look like a traditional stout. I’ll admit it took a few sips for my palate to adjust to a light-colored stout. Once you do adjust, you’ll taste a complex lighter stout that is loaded with vanilla, coffee, toffee, chocolate and Bourbon. Overall I really liked New Holland Dragon’s Milk White and I think the combination of flavors (and colors) made it a very drinkable but non-traditional stout.
