What a challenging time we're faced with.
As I'm sure you know, I've been running around like crazy trying to keep our doors open over here.
Bars and restaurants closing down, people being out of work, social distancing and Amazon still not releasing Season 2 of The Boys is weighing on me personally and impacting your little pucker factory.
But we bottled 130 cases last Wednesday, I brewed last week and I haven't taken a day off since Rogan and I went hiking on March 12. Because I'm a lot of heavy things but a quitter is not on that list.
We also bottled 50 cases this week and there are some pretty killer beers to share with you. Including those spicy PKL FKR variants you guys seem to love so much.

I'm even doing a run to Houston and planning one to Harlingen via Corpus in a couple weeks.

Saison de Main de Bouddha

There's this guy named Kevin that grows all kinds of cool stuff at his house here in New Braunfels.
And he's cool enough to share some so I can flex my experimentation muscle. You can absolutely thank him for this beer as I'm not sure where the Hell else I would have come across this fruit.
I started with the Mandarina Bavaria leaf hops I used for Hopfenstopfen and then for Star Full of Skies. Twice spent, they had a surprising amount of aroma left to impart. So I cut up Kevin's fruit into small pieces and added them to the hops. When I had experimented with Buddha's Hand previously I removed the zest because in other citrus the zest gives a soapy bitterness (Mexican Cannon) that I don't like. But with the fruit it doesn't. The best gave a clean, bright zing to the beer with just the right amount of bitterness. Then barrel-aged Blondine went over top and I left it alone to ferment and blend the flavors for two weeks.
I then transferred the beer off, added priming sugar and Courtney, David and I will filled about 110 500ml bottles April 8, 2020. You'll notice that these are new 500ml bottles and I have decided that I love these new ones.
The fruit was then reserved for 750ml bottles of Blondine de Main de Boudda, which you'll see below.

Last month the 6X SJS members helped me bid farewell to Black Fury. She is a beer I have quite a tenuous relationship with. As many of the best things in life, She has caused me great struggle as well as beautiful achievement.
I held onto 25 gallons of Black Fury and aged for 7 weeks in a Garrison Brothers bourbon barrel.
Black Fury is a chocolate-forward black wheat beer that begins life around 5% abv. After 7 weeks in bourbon, she smoothes out, rages on and kicks her ABV to 7.8%.
I transferred the beer, added priming sugar and we'll fill her the same day in the same new bottles as Saison de Main de Bouddha.
I did 110 bottles and one small keg for that Back At It Party we're doing when Covid dies.
There is complexity for days in this beer. She's bright, acidic and sour. She's also smooth, almost creamy and somehow delicate.
This is also your last chance to get your grubby little hands on her before she leaves the building.
I won't be making this beer again-sorry.
Blondine de Houblon Blend1

I'll admit, I'll fallen in love.
Nothing inappropriate and I've been a perfect gentleman. But I'm freaking obsessed with this beer.
Blondine has evolved over the past year with the addition of some aged hops and a warmer fermentation temperature. It's really shined with its rustic farmhouse sensibility combined with a crisp mouthfeel and clean finish. And it's just dying for some tropical citrus to add layers of hops and sex to it.
Well, for Blondine de Houblon I'm taking inspiration from the hazy, New England, juicy IPA style. It's really the only IPA style I enjoy drinking, as long as they keep the orange juice dialed back.
I dry-hopped two different batches of Blondine. The first used 2lb/barrel of Cashmere hops, an American variety that brings herbal aroma and flavors of lemon, lime and melon.
The second used Idaho Gem hops which layer in Pineapple, Cherry, Candied fruit, Herbal and Spicy notes.
After 11 days I racked the beer off the hops and blended together before packaging. And yesterday I began fermenting Star Full of Skies on those spent hops.
We packaged Blend1 in 750ml bottles back on March 25 and it is more than ready for you now.

This is one of those beers I made with no preconception of how it would turn out.
I know what Blondine does, I know what spent fruit does but I had no real standing point to know what to expect form combining them here.
Wow, this beer turned out to be something quite special.
Noticeably more bitter than it's Saison de brother, this beer is more like a citrus IPA with bright aromas, restrained bitterness on the palate and a clean, citrus finish that damn well better delight your flavor buds. Because if not, something may be wrong with you.
Like all Blondine de Beers, I repurposed the spent Buddha's Hand citrus fruit that gives their deep, sticky citrus aromas and flavors to Saison de Main de Bouddha. The spent Mandarina was also in there and gave just a touch of hop sensibility that helps whisper the story of the citrus zest bitterness.
We only packaged 70 bottles of this one on March 25 in 750ml Champagne bottles.
You're truly gonna love this one.
