With February fast approaching, we are mere weeks away from our next bottle release and brunch! February's release kicks off our month-long celebration of bourbon with four bourbon barrel matured beers, as well as a hop-forward offering out of our progressive IPA series, The DAB Lab.

This release will include Super Nebula; Super Nebula, Breakfast with the Turkey; Super Nebula, Vanilla; and Kriek, a Spontaneous Cuvée in 500mL bottles alongside cans of The DAB Lab, Juice Joint.

Release beers will be available both at our Tap Room event, as well as limited, reservation-only brunches at our downtown Pub and Caves. Please see below for information on how to enter the lottery if you are interested in a brunch reservation.

If you are not drawn for a reservation or are not interested in attending brunch, we will reserve a full allocation of bottles and cans for at least the first 50 people in line at the Tap Room release

The release will begin at 11am, but we will be opening our doors at 9:30am, so you can arrive early and hang out over complimentary hot coffee and donuts, some killer food specials, and our release beers on tap. (We'll issue you a number when you arrive, so you can mingle before the release without losing your spot in line.)

Kriek glazed ham or tempeh, poached eggs, balsamic sauteed chard, and rosemary hollandaise on a toasted English muffin.

Imperial Stout Matured in Bourbon Barrels and Conditioned on Cocoa Nibs

Each year we mature Super Nebula—an imperial version of our Nebula Stout—in unique bourbon barrels, followed by conditioning on cocoa nibs selected to complement that year’s blend.

2020 Super Nebula was matured in Wild Turkey bourbon barrels and then conditioned on direct trade and Rainforest Alliance Certified Forastero cocoa nibs from Ghana.

Bourbon Barrel Matured Imperial Stout with Cocoa Nibs, Maple Syrup, and Coffee Beans

This special variation of Super Nebula was matured in Wild Turkey bourbon barrels and conditioned on Ghanan Forastero cocoa nibs, maple, and Kenyan Aguthi Thage-ini coffee beans from Bespoken Coffee Roasters.

Super Nebula, Vanilla Chocolate Raspberry
Bourbon Barrel Matured Imperial Stout with Vanilla, Cocoa Nibs, Chocolate and Raspberries

This special variation of Super Nebula was matured in Wild Turkey bourbon barrels and then conditioned on Ghanan Forastero cocoa nibs, liquid cacao, vanilla, and red raspberries.

Kriek, a Spontaneous Cuvée
Oud Bruin Spontaneously Fermented in Bourbon Barrels with Cherries

Kriek, a Spontaneous Cuvée is an oud bruin inspired wild ale that was spontaneously fermented in bourbon barrels first used to mature Super Nebula. After extended conditioning on Montmorency cherries from The Cherry Country, we blended barrels of Kriek at their peak of character, marrying the unique expression of our wild cellar’s resident flora with the essence of fresh tart cherries and a subtle hint of bourbon.

Progressive IPA ftg. Hop Extractions

The DAB Lab series focuses on vibrant hop-forward ales that prominently feature hop extractions. Juice Joint pairs dank, citrusy, and tropical varietals—a heady hop combination that’s packed with hop character of resin-dipped pineapple skunk and freshly squeezed twisted citrus.

Entering the Brunch Lottery

We will be holding a lottery for brunch reservations, with a limit of two seats per entry. If your name is drawn, your reservation will enable you to purchase all bottles up to their limit amounts.

The lottery entrance will end at 5 pm on Tuesday, January 14, and we will notify you by Thursday, January 16 if you have been selected for the brunch.

There will be a $10 deposit per reservation to secure your seats, and brunch attendees will be required to pre-order bottles when confirming brunch time and location. You will also have the opportunity to select your brunch start time (9:00, 9:15, 9:30, or 9:45), and you will get the choice of a special brunch at Block 15, or normal brunch service at Caves. More details on selecting your times and restaurant will come in your selection email.
