In the summer of 1972, Miami's own football team began a campaign of perfection that no other organization had ever achieved. Undefeated Saison is made in honor of that legendary team.

The story goes that each year, after the last of the undefeated pro football teams falls, members of the 1972 squad all raise a glass of bubbly in unison to toast their still-unmatched achievement. We sought to create a beer suitable for that legendary and oft-discussed toast. And so we came up with Undefeated Saison - a crisp and refreshing french countryside ale brewed with grape must and champagne yeast. The saison yeast creates a dry, crisp character while the grape must adds a touch of wine-like fruitiness. We bottled this beer in 750ml wine bottles and conditioned it naturally in the bottle with additional champagne yeast to create a beer that drinks, quite literally, like some fine bubbly.

This year’s vintage of Undefeated Saison is aged in Chardonnay barrels for an elegant touch and smooth notes of lemon peel, vanilla, and oak.

Every year when the last pro team falls, we release this beer and send it to the head coach that beat the undefeated team. One bottle to celebrate and one bottle to sign and send back to the brewery. Afterwards, we release it to the very thirsty Miami fan base. 750ml bottles will be available exclusively at the taproom for $14 a piece. So stay tuned to this year’s season because when the last team loses, we all win!
