This is SPON 2016 from Jester King Brewery in Austin, TX. This spontaneously barrel-fermented beer is a blend of vintages of 100% spontaneously fermented beer. Jester King took “Hill Country well water and did a turbid mash with Texas Malted barley and raw wheat. They then boiled for four hours with aged hops from their barn. The wort was cooled overnight in a coolship, then 100% spontaneously fermented in oak barrels. This spontaneous beer was then blended and naturally conditioned through refermentation in the bottle.” This beer will be packaged in 750ml bottles and stay tuned here for AbV and release info.
