Yonkers & Evil Genius Collaborate On Black Spelt Saison

We have been working with a lot of great breweries in the past few weeks. We collaborated with Sixpoint Brewery on a Russian Imperial Stout called "Back in the B.E.E.R.," which will be featured at NYC Beer Week, and teamed with Davidson Brothers Brewing Co. on a traditional English version of our Vanilla Stout. To round off our trio of collabs, we had Evil Genius Beer Co. head brewer Jon Defibaugh come over to brew a black spelt saison with us.

Since our head brewer Sharif really likes making Belgian-style beers, specifically saison, it was an easy decision to create a riff on the style using pilsner malt, spelt and toasted caraway seeds. From a flavor profile standpoint, we can expect a decidedly Belgian, estery brew with some accentuated spice character thanks to the  caraway seeds and a nuttiness from the spelt.

"It's SPELT Saison" should be quite the interesting brew; much different from the other saison variants we have made over the last year or so. One of the fun parts of collaborating with other breweries is that it creates an environment for sharing experience and an incubator for ideas. Jon is a very creative guy who knows his stuff about the industry; we definitely hope to work with him again in the future and wish Evil Genius the best of luck in creating a new production space.
