If you've been to our brewery you know that we're not swimming in space. We've done our best to maximize the space we have and make the best beer possible. One thing that we haven't been able to celebrate is the process of working with barrels. Barrel work, when done well, takes real consideration and commitment.
In order to fit barrel work into our facility, we've begun working with smaller barrels from Corsair Distillery. For this beer, we make use of Corsair’s unique gin barrels. Typically barrels aren't used to make gin, but they create a specific gin that is aged in their used spiced rum barrels. We have selected these barrels to finish Pony Pilsner. The result is a beer that maintains its clean pilsner base, but stacks on refreshing flavors of botanicals, spice, and oak.
We'll begin to sell this barrel worked pilsner today.
