I’m excited to see Wild Onion will be releasing a new beer called Otis Hop Harvest IPA Sept 28th. This from Wild Onion:
Wild Onion Brewing Co. in Lake Barrington is thrilled to announce the release of their new beer Otis, a Hop Harvest IPA, on Sept. 28. This full-bodied India Pale Ale is exclusively wet hopped with 60 pounds of the much sought after and elusive Amarillo hop. The hops were picked in Washington state and sent to the brewery to provide a once-a-year taste of hops at their freshest.
"This Hop Harvest IPA, Otis, is made from the freshest hops, picked and sent overnight from Washington state, for a one-of-a-kind taste!" said Mike Kainz, the Brewmaster of Wild Onion Brewing Co.
Wet hopping allows the subtle nuances of hop aroma and bitterness to be infused into the beer. This is only possible during the hop harvest, which occurs during the month of September. Otis, named in tribute of former employee Kathy Steele, is only available on tap at the Onion Pub and Brewery in Lake Barrington and will be tapped on Sept. 28. The ABV is 6.5 percent.
Wild Onion Brewing Co., along with its pub, The Onion Pub and Brewery, expanded its full-scale brewery's production last spring with the addition of four new 40-barrel fermenters and storage tanks that were custom built for its unique basement location. The brewing company also planted four different types of hops, the flowers of which are used to flavor the beer and act as a natural preservative.

About The Onion Pub and Brewery
The Onion Pub and Brewery began as the Wild Onion Brewing Co. in 1996 with the simple goal of brewing the finest beer available to local beer drinkers. Its original brewery was located two blocks away and was pieced together with used dairy tanks in a small warehouse. As The Onion Pub and Brewery grew its keg and bottle sales throughout Chicagoland, it began to dream of building a taproom and pub on its site. That dream became a reality when the Onion Pub and Brewery opened its doors to the public in 2003. The Onion Pub and Brewery invites the community to visit its three banquet rooms that can accommodate up to 250 guests.
