Just a few updates from Jeff Bagby on the Bagby Brewpub San Diego…
Location
While there are several potential locations we are considering in north county San Diego, there is one we are actively & enthusiastically pursuing at this time. This process is an extensive one, to say the least. As you may have already read, for us, finding and securing a location is the single most important phase of our project. We are taking the right amount of time to do just that, but at the same time, we realize that every day, week & month we are not to the permit/build-out phase is another day, week & month until we can open. So, to say it is a balancing act is an understatement! The spot we are interested in would be everything we have been hoping for, and would be a tremendous transformation of the property. We are so sorry we can't release any more info just yet - it's our great hope the next couple of weeks will see some real progress here. As soon as we are able - you'll be the first to know!
Business plan & other conceptual documents
This is an organic process for sure, and the more we work on location, the more solidified this aspect becomes. If you know us, you know that we tend to have a pretty clear vision of what we like and what we think will work. Of course everything we document is a work in progress, and is certainly subject to change - but this aspect has been an exercise in really gaining an understanding and a strong sense of what we'd like to see unfold once we are open.
Additional Details from NCTimes:
The San Dieguito High grad has since expanded his considerations to other North County locations, including Oceanside, San Marcos, Carlsbad, and Vista. He said he's been searching sites from 5,000 to 10,000 square feet in size ---- he plans to start on a 15-barrel system --- and is hoping to nail down a location by the end of the summer.
"We want to be North County coastal," said Bagby, who got married in June and now lives in Vista. "We want a community-based restaurant and brewery where the locals can come and the brewery supports local groups and has events that help the community --- something the city can get behind."
