Every year, we experiment with a dozen or so flavor variants of our legendary imperial stout. Three make the cut. We preview them at Darkness Day in October and send them to market in December. Here are your 2023 Darkness Variants:  zzubreebym

PARKER’S HERITAGE 15 YEAR HEAVY CHAR BOURBON BARREL-AGED DARKNESS

For those who aren’t bourbon enthusiasts, “heavy char” simply means the interior of the barrel was charred longer than usual, allowing the liquid to penetrate deeper into the wood and imparting caramel and maple notes from the staves. Maturing Darkness in that kind of barrel from a renowned bourbon like Parker’s Heritage brings out a universe of rich, toasty flavor and intense aromatics.

For those of you who are bourbon enthusiasts, just know that it tastes incredible.

COLD SMOKED CHERRY BOURBON BARREL-AGED DARKNESS

The creation of brewer Adam Dahl, it tastes exactly how it sounds. We smoke what can charitably be described as “a hell of a lot” of cherries, then lay Darkness down on them and some dark cherry puree for good measure.

The resulting flavor treads closer to a dense, decadent Luxardo cherry than a Starburst, and really brings out the cherry note in the Darkness profile. The pleasing hint of smoke elevates it to an entirely other level.

COCO NITRO BOURBON BARREL-AGED DARKNESS

Our first-ever foray into canning Darkness on nitro!

We’ve aged Darkness in bourbon barrels before, and we’ve matured it with good friends like coconut, vanilla, and cacao before, but putting it on nitro is uncharted territory. Our adventurous spirit was rewarded with the absurdly smooth creaminess of the finished product. You’ve never tasted Darkness like this (literally).

The 2023 Darkness Variants are available in boxed 16-oz. cans to all Surly markets.
