Jester King Announces SPON Day & Holiday Market

We’re excited to celebrate SPON Day in person again this year! Join us on SATURDAY, DECEMBER 11, 2021 FROM 11AM-9PM CT as we release our annual three year blend of spontaneously fermented beer, feature some of our favorite spontaneously fermented beers and wines, and celebrate the season with a holiday market featuring local vendors, delicious food from Jester King Kitchen, private tours & tastings, live music, holiday goat photos, and more!

The 2021 SPON Three Year Blend will be released on Saturday, December 11, 2021, and will be available while supplies last by the glass onsite and in bottles to go. The 2021 SPON Three Year Blend is our sixth "vintage" and is a blend of 100% spontaneously fermented beer from 2020, 2019, and 2018. We've been pursuing spontaneous fermentation at Jester King since February of 2013, and we're excited to begin our 10th winter of spontaneous fermentation soon.

We’ll also be releasing five additional 2021 SPONs on December 11th, including:

  • SPON Still

  • SPON Blueberry & Pitaya

  • SPON Rye

  • SPON Prickly Pear Cactus

  • Tulle — 100% spontaneous beer brewed with Texas Wildflower Honey in collaboration with The Veil Brewing Co.

Our 2021 SPON releases will be available for purchase onsite and for curbside pickup on Toast Tab starting December 11, 2021 at 11am CT.

  • Onsite only; No online or call-ahead ordering at this time

HOLIDAY MARKET & ACTIVITIES

We’ll also be featuring local vendors with a holiday market that will run from 11am-6pm in the Beer Garden. A few of the vendors you’ll be able to shop are:

Delicious bites from the Jester King Kitchen will be available, including items from our new BBQ menu.

You’ll also have the opportunity to get your photo taken with our goats! Head to the Goat Barn between 11am-1pm to get a holiday photo with our Nigerian dwarf goats. We’re encouraging a $10 donation to PAWS of Austin -- a no-kill dog shelter in Central Texas -- before you get your picture taken. You'll be able to retrieve your photos online two days after the event.

We’ll be hosting three special events, two of which are ticketed and can be purchased below:

  • Join us for a Jester King SPON beer and barrel room brewery tour with Sarah Lee. You'll get a closer look at our 700 barrel fermentation room where she will guide you through the process of making SPON. December 11th at 11:30am. Purchase tickets here. Must be 21+. Only 15 tickets available.

  • Our friend, Lewis Dickson of La Cruz de Comal Wines, will be hosting a one-hour private wine tasting accompanied by gourmet food pairings from Jester King Kitchen. The event will take place on December 11th at 3pm at the Jester King Inn. This tasting will deepen the knowledge of experts and novices alike on the intricacies of spontaneously fermented wines. Purchase tickets here. Must be 21+. Only 20 tickets available.

  • Learn about the beers of SPON Day 2021 from those who deal with them the closest: Jester King co-founder, Jeffrey Stuffings, our brewers, and tasting room staff veteran and Texas Lambic Fest founder, Nic de la Rosa. They will give an in-depth perspective on spontaneously fermented beers, cellaring, and Spons from the past. Come with questions as this will be an opportunity to ask this knowledgeable panel all things Spon! 1pm at the brewery. Free & open to the public.
