Today I have a new collaboration beer coming from Off Color Brewing in Chicago, IL. This is Avec Le Guillotinè and it will be a collaboration with Metropolitan Brewing. The beer will be a flavored ale brewed with Columbia hops and it will be a blend of 70% traditional German-style doppelbock lager, 25% native-fermented Flemish-style ale aged in Calvados foudre (1-year) and 5% American wild ale aged in wine barrels for 3-years with Cabernet Franc grape must. If that’s not enough fun,, the blend is refermented with Balaton cherries and wild yeasts then double barrel-aged in a mix of 2nd use Bourbon barrels and Pomegranate Fox wild ale barrels for an additional 3-months. The resulting beer will hit 7.8%-AbV and 18 IBU and you’re looking at the 750ml bottle. Stay tuned for full release info. I’ve also added in the non-collaboration Pear Reine Des Renards Flemish-style blonde ale fermented in Calvados foedre with pears, pear juice and native yeasts (7.8%-AbV, 14 IBU, 250ml cans)..##mbb#
