Back in August, we collaborated on two new beers with our friends Jimmy Valm and Matt Patton of Thompson Island Brewing Company in Rehoboth, DE. To celebrate Thompson Island's grand opening, we're releasing both today. First up is an open-fermented Helles inspired by Valm's trip to Germany to see Thompson's new brewhouse (and his love for our open fermenters). Pale and straw-colored, this delicate German Lager has notes of honey, wildflowers and fresh-baked biscuits. We also indulged Valm's penchant for hops with an IPA dry-hopped with Citra and Lemondrop. This beer gets an extra citrusy kick from an infusion of makrut lime leaves, which come from Asian limes and have oils very similar to hops.
