Exciting craft beer news from Council Brewing in San Diego, CA:
3 years ago we released our first barrel aged beer, Nicene, launching what is now one of California's most prolific sour beer programs. This first beer still holds a special place in our hearts here at Council and many of our customers. We aged Nicene 2017 Farmhouse Saison in white wine barrels for 15 months, extracting the light, tropically fruity wine character, soft oak vanilla tannins, and developing a beautiful musty, farmhouse character. We then cellared the bottle for 3 months prior to this release. This beer pairs exceptionally well with light meats such as chicken and fish. Or simply enjoy this beer how saisons were originally made for - a refreshing beverage as a reward for a hard days work on a warm San Diego day.
