The Mad Scientists make a pilgrimage to the Hop Motherland at harvest time to select only the best, ripest, fullest hop cones for SENSI. When you get out into the fields, and see fresh hop cones swinging on the bine, the potential flavors and aromas of wet hops start to spin in your head. When we saw this year’s crop of Amarillo hops, and plucked a few choice cones, we knew what we had to do. 

We had an idea of what we wanted in SENSI, but we wanted to make the final call out in the hop fields. Amarillo wasn't necessarily part of the plan, but out at
Double R farms we were captivated… Sixpoint Head Honcho Shane Welch made everyone stop the presses – there was no doubt that we were sending these hops,725 pounds of ‘em in fact, straight from the farm to the brewhouse. The Cascade crop was also a knockout this year, so those two strains are the whole cone wet-hops used for SENSI 2015. 

Like most any plant or spice, hop flowers begin to wilt soon after they are harvested. To preserve the essential flavors, most hops used year round have been dried and pelletized. Beers made with dried hops and pellets are obviously amazing, but there are certain intrinsic qualities and flavors of wet-hops that are inevitably altered in the hop kilns.
