Chicha is the quintessential native corn beer found throughout Central and South America. As per tradition, instead of germinating all of the grain to release the starches, the purple maize is milled and moistened in the chicha-makers mouths. Don’t worry, it’s boiled later, so it’s sterile ... and quite tasty!
