Brooklyn Brewery, a New York City-based craft beer maker, will help develop a small brewery open to the public and students at the Culinary Institute of America campus, the school said today.
The brewery is expected to open to the public in the summer of 2015, said college spokesman Jeff Levine.
The school will integrate brewery operations into its curriculum. The brewery will be in the new student union building on the campus, he said.
Juniors and seniors working on a concentration in advanced wine, beverage and hospitality will staff the brewery and learn about fermentation and brewing techniques, and the business aspect of running a small food and beverage operation, he said.
