Biloba Brewing Co. hopes to open by early January at 18720 Pleasant St., one block east of N. Brookfield Road. Other than brew pubs--restaurants that feature beer brewed on premise--it will be Waukesha County's first craft brewery.
Biloba will operate both a microbrewery and a tap room within 2,000 square feet of converted industrial and office space, said Bryan Dallmann, brewery manager. It will have 10 taps to provide a rotating lineup of beer varieties, he said.
