Construction is wrapping up, and they’ve already brewed all four core beers, according to Bob Bonder. Bonder, president of the Tazza Mia coffee houses, and Bryant Goulding are behind the venture at 1910 Elm St., on the second floor of the former Christian Moerlein bottling plant.
Bonder said the overall focus will be on “citrusy/tropical, dry-hopped, West Coast-style beers … with a touch of quirky, creative mad scientist in there, too.” The trick is, they’ll strip out the sweetness, leaving beers that are dry but retain the fruity aromas, he said.
