After touring a few spots, Boynton said 47 Washington St., in the downtown mills, overlooking the Cocheco River, was the perfect home for 7th Settlement.
The name came about because Dover is the 7th oldest settlement in the country.
Boynton said they are designing the 4,500-square-foot restaurant and brewery to look rustic and to keep its old community feel.
“It will be appropriate for the historic mill it is located in. We’re keeping the exposed beams, the posts, the 13-foot ceilings,” he said, adding that Henry and Sephton are also general contractors, woodworkers and carpenters, so the trio have been building the brewery themselves.
The space will have an extended bar overlooking the river. Boynton said it will measure out at more than 30 feet long. Two fourteen-foot-long high-top community tables will be in the bar, where multiple parties will sit together.
