Today brings a very atypical brew, commissioned exclusively for Philadelphia Beer Week and our scale-up from Pat O'Malley in Philadelphia... high gravity Rye IPA using (copious!) malted rye from Great Western Malting, Briess Carapils and Caramel 10 malts, Maris Otter and Canadian Metcalfe and Copeland malts. Besides some new malts for us, the hops are all being used for the first time here, Southern Cross, Simcoe and Steiner Experimental 0526. And it will be our first dry-hopped ale. Destined for draught only!
Trevor Fitzgerald, our sales colleague from Philadelphia, kindly came up to help us out for the day. The record I'm not looking to see but know it will come inevitably: this is going to be by far the longest runoff from lauter tun to kettle that we have experienced. I may not be raising a glass to Pat O'Malley when we finish up late tonight...
