From Haw River Farmhouse Ales:
A few weeks ago, we were invited to brew a very special batch of beer with our friends over at Trophy Brewing Company in Raleigh. In honor of North Carolina's first inaugural NC Beer Month, we decided it was a great opportunity to create a recipe that used only ingredients grown or collected in our homestate of North Carolina. So we called our friends at both Riverbend Malt House in Asheville and Farm Boy Farms in Pittsboro, and sourced locally-grown barley & rye malt from the western part of the state, and 2-row barley grown in Alamance County (which was specially toasted just for us by Dan at Farm Boy!).
We used three types of whole leaf hops grown during the 2012 harvest season at Farm Boy just down Highway 87: Nugget to bitter, spicy Chinook to flavor, and Cascade at the end of the boil to provide a little citrus-spicy aroma, which we knew would play nicely with the two pounds of young, fresh White Pine needles we collected from a few trees here in Saxapahaw.
To ensure every single aspect of our beer's ingredient list was 100% "North Carolina", we fermented our saison with the single culture native wild yeast strain we collected & isolated last February from here in Saxapahaw. This particular yeast imparts a wonderfully dry, honey-like flavor & aroma that provides a solid backbone to support the "black pepper" notes from the rye, Chinook and pine needles we used for flavoring, resulting in a clean, spicy balance that ended up working rather well for the style.
So now our collaboration White Pine Rye Saison is ready to enjoy and going on tap this Thursday, May 2nd, in the Trophy Brewing taproom at 827 West Morgan Street in Raleigh! We're inviting all our friends and fans to come have a glass with us this weekend—the beer goes on tap Thursday at 3pm, but Dawnya & I plan on hanging out Friday afternoon to share a pint with our friends (on Thursday, we're both in Asheville attending a sold-out Sour Beer Symposium hosted by Ms. Lauren Salazar of New Belgium Brewing, which we're really excited about, so we plan to be back in central NC on Friday afternoon to celebrate with everyone at Trophy!).
