Ralph Quillin, owner of Quillin Leather & Tack, plans to open Rooster Brewing as early as May in a former furniture store on Main Street.
"I've been home-brewing for a pretty long time," he said.
The 1,500-square-foot building is being renovated to include 1,000 square feet for a taproom where the beers would be served and 500 square feet for brewing. Quillin said an adjoining building could be used for expansion "if we have any kind of success that would mirror what West Sixth and Country Boy have," referring to the Lexington breweries that opened in the past year.
He envisions a beer-only taproom, serving six beers brewed on site and four regional offerings. As for the name, he said a rooster watched intently for a month when he first began home-brewing.
