The Crispin Cider Company introduces its annual Americana whiskey cask aged hard apple cider in time for the holidays.
The cider is in limited release. And like its predecessors – The Jacket and Stagger Lee – it is themed as an All-American, rock and roll cider.
“We have tried to bottle the spirit and philosophy of alt. country music and the bands that make that music,” said Bruce Nissen, Crispin Head Cider Maker. “Bird On A Wire, the cider, sets cider free. We’re an untraditional American cider company. We explore the boundaries of fermentation, yeast strains, barrel aging and blending. These are our songs.”
The Greatest Cider Adventures
Blended four times using four different apple wines from naturally fermented, unpasteurized American fresh-pressed apple juice. Then it’s aged in American rye and Bourbon whiskey barrels.
The Apple wines were fermented with Irish Stout yeast, Belgian Trappist yeast, Sake yeast and Crispin’s unique Colfax Classic apple wine.
The blend was then finished with Tupelo Honey aged in Bourbon Barrels and unpasteurized fresh-pressed apple juice.

Dances across the palate like a band playin’, people swayin’. Spend some time, wait a minute. Set it free.
ABV: 6.9%
Poured Appearance: Whiskey Cloudy. Honeyed & opaque
Color: Rich golden orange
Aroma: Whiskey notes up front & center, ripe apple, honey notes
Flavor: Very smooth and totally balanced. Toasted oak tannins, soft rye spice, cask-woody vanilla and cinnamon. Finishes with a lingering open-mouthed kiss of farmhouse style apple juice
Unfiltered and blended from apple-wine straight from the whiskey barrels. Give it a solid, firm, bottoms-up tilt and swirl to disperse sediment evenly to best enjoy whiskey aromas and unique bouquet. Best enjoyed at cellar temperature, 50/55F, with or without 1 or 2 ice cubes.
Bird On A Wire is most certainly worthy of aging in your cellar.
