Creature Comforts Brewing Company will release, My Very Own Mole, from its tasting room this January. The limited release is a mole-inspired imperial stout at 11-percent ABV.
Mole is a very regional and personal dish in Mexico that reflects a true sense of the land, ingredients, and the people making it. With that custom in mind, Creature Comforts used local and regional ingredients, while also honoring the traditional dish, to make this mole-inspired beer. In addition, the brewery sought insight on a mole recipe from Maricela Vega, Executive Chef of 8ARM.
This imperial stout was made with chilis, cocoa nibs, cinnamon, pecans, vanilla beans, benne seeds, and hoja santa. The brewery sourced the pecans from Pearson Farm, benne seed from Anson Mills, peppers from Sundance Farm, Tumble Tree Farm, and Hickory Hill Farm, the hoja santa from The Feral Woman's Garden, and the cocoa nibs from Condor Chocolates.
