For Scratch #331, we’re testing out the adage: “Good things come to those who wait.” We started with a base of pilsner and honey malt, then held off on hopping until the whirlpool – the last opportunity on the hot side of brewing – to add hops. We’re getting a great big aroma, with notes of white wine and grape from Hallertau Blanc and berry and a hint of pine from Denali, with no bitterness up front. The honey and fruity apricot notes of the malt come through in the middle followed by a touch of hop bite late in the finish. We taste: white grape, honeycomb, strawberry. Draft and growler fills now available at the brewery.
