Typically milled into flour, the starchy, protein-rich seed known as buckwheat technically isn’t a grain. However, that didn’t stop us from tinkering with this unusual ingredient for the first time with Scratch #322. This farmhouse-style ale features local PA buckwheat from our friends at Deer Creek Malthouse and malted barley courtesy of Double Eagle. The buckwheat lends a delicate earthy, nutty flavor reminiscent of peanut shells. Dry-hopping with Azacca and LemonDrop introduces bright lemon and citrusy aromas, while Belgian LaChoufe yeast chimes in with a touch of clove spiciness.
