BREWPUB
With the goal of creating a place where people can come together to share their passion for beer, Oddwood is developing a commercial brewing space along Manor Road in East Austin. Scheduled for completion in Fall 2017, Oddwood’s intimate brewpub – located in a building previously used as a Tejano nightclub – will include a working brewery and a 2,500-square-foot taproom open to the public. Intended to become a casual hangout spot for the nearby Mueller, Cherrywood, and East MLK neighborhoods, Oddwood’s space will feature cozy lounges, an outdoor patio, and a bar with guest beers on tap. Current plans call for an in-house kitchen to provide visitors with a variety of bar-style pizzas to complement Oddwood’s bold beers.
To properly age and flavor their beers, Oddwood is bringing in multiple foeders – wooden barrels designed for long-term fermentation. Foeder Crafters, the only makers of American foeders, will construct American White Oak foeders for use in Oddwood’s brewery. Helping design the brewpub is OPA Design Studio, the architecture and planning firm behind regional breweries like Live Oak Brewing Company, Twisted X Brewing Company, Still Austin Whiskey Co., and Whitestone Brewery.
BIOGRAPHY
Taylor Ziebarth – Cofounder/Head Brewer
Taylor’s love for wonderful beers began at a relatively young age. After high school, Taylor traveled to Europe and developed a taste for Belgian and German beers. Tight lipped and mysterious about his brewing process, Taylor began making batches of his own beer while in college. After graduating with a degree in finance, he traveled around the world with his soon to be wife, where he was continuously exposed to the many beers the world had to offer. A few years later, after growing tired of following traditional small batch
recipes in his tiny kitchen, he left his tech job to become a full-time employee at Adelbert’s Brewery, working his way up from a volunteer mopping the floors to their head brewer. His time there continued much of the experimentation and roots for what Oddwood Ales has become.
Brett Ziebarth – Cofounder
A filmmaker and illustrator by trade, Brett was brought into the fold in 2015 to help bridge the gap between the design elements created while at Adelbert’s and the new look of the standalone Oddwood entity. Based in Brooklyn at that
point in time, Brett left his job at the New York Film Academy to help launch the Oddwood mission and get the brewery off the ground. He’s since relocated to Austin and continues to utilize his creative background to shape Oddwood’s future as a neighborhood brewpub and premiere craft beer distributor. Once the brewpub is complete, Brett’s artwork will be displayed throughout the space.
