The Veil Working On Two “All That You Are” Sour AlesFrom The Veil:

Today we began our first barrel fermented wild beer conditioned on whole local fruit. The base beer is called All That You Are and is a barrel fermented mixed fermentation farmhouse inspired ale with a touch of spelt. After barrel fermentation occurred, All That You Are spent an additional year in French Oak Virginia red wine barrels. We then pulled half of the batch and will allow it to referment on whole red raspberries from our friends at Agriberry CSA and Farm. For this batch, we used slightly higher fruit volumes than Lou Pepe Framboise(one of our favorite Belgian Framboise). We will allow it to referment and essentially macerate on the whole fruit for approx 3 months. After this period, we will remove the beer from fruit and bottle it. Hoping this will be ready for our 2 year anniversary in April 2018. Unfruited All That You Are will be bottled this week. Hoping for a January release for that. Stay tuned!image
