DENVER, CO (December 8, 2016) – Fiction Beer Company and the local donut gurus at Glazed and Confuzed have come together once again to create their third annual donut beer collaboration. The 2016 edition of “Donut Panic” is a Strawberry Wit based on the classic strawberry donut.
The brewers at Fiction Beer Company together with the chef at Glazed and Confuzed wanted to ensure that this year’s beer would be quite different than last year’s release. In creating the third annual recipe, the goal was to create yet another beer with a flavor and texture profile that beer geeks and beer novices can appreciate, while also recreating the doughy mouthfeel of a donut touched by the sweetness of strawberry icing.
A base beer high in silky wheat malt and balanced by bready pilsner malt was required to provide the backbone our beer needed. We started with a Wit beer containing over 40% wheat to give the smooth, full mouthfeel we imagined. The rich pilsner grain character reflects the flavors of a fried donut. Having created the base of our donut flavor we added over 400 lbs. of strawberries, several dozen donuts and the classic strawberry glaze to help mirror the flavor of the icing.
The donuts were added in the mash to better utilize their sugars. Over 30 lbs. of strawberry glaze was added at the end of boil to help layer in the strawberry flavor and allow it to ferment alongside the malt sugars. The strawberries were pureed and added after fermentation was complete. The large strawberry addition adds a layer of fruit to the amazing aroma which is surrounded by soft wheat.
Our creation starts on the palate with a burst of fruit flavor which quickly parts to make way for the delicacies of a wit beer. The refreshing dry character of this style lends the perfect canvas for the gentle strawberry flavors. In order to up the ante this year, Fiction Beer Company is releasing Donut Panic in 12oz CANS! 6 packs will be available for purchase in the tap room and liquor stores.
As is tradition, Fiction Beer Company will host Glazed and Confuzed the Saturday before Christmas for a special release party. On Saturday, December 17, Donut Panic will be available on tap and in cans (to go only). The release event will include donut and beer pairings, sprinkle rimmed glasses (optional), special discounts on beer and brunch options available from the regular food truck at Fiction. Doors will open at noon.
