Today we had the pleasure of brewing with Jessica Jenkins & Christian Skovdal Andersen of Penyllan on the island of Bornholm, Denmark!
We brewed with native raw wheat from the island, hay, foraged juniper, and we'll ferment with Jester King's mixed culture of brewers yeast and native yeast and bacteria.
Penyllan is doing some really cool things in the world of mixed culture fermentation. They're making some beautiful beer in a beautiful place.
