PORTLAND, Ore. – October 19, 2015 – Widmer Brothers and Bamboo Sushi today announced the arrival of Biere de Bamboo, a small-batch classic Biere de Garde, a French-style strong pale ale. The beer was crafted specifically for Bamboo Sushi & will be on their menu in very limited quantities starting this week.
Biere de Bambou is a brilliant orange color and features a flavor profile of bread, ripe melon, strawberries, and hints of spice. A mild but enticing bitterness complements the full flavor maltiness. The beer is strong but not overpowering, making it a perfect pair for many dishes, including tuna sashimi, okonomiyaki, and even spicy food such as Bamboo’s “House on Fire” mackeral.
Bamboo Sushi has long served Widmer Brothers’ beer, and the relationship has grown over the years through a mutual commitment to sustainability; both companies have taken great measures to reduce their impact on the earth.
Bamboo Sushi consists of three restaurants in Portland, all built on a legacy of sustainable principles. Bamboo Sushi is the first certified sustainable restaurant in the world, sourcing the freshest fish, meats, and produce with the greatest consciousness to marine stewardship, sustainability, and the environment. The restaurant has strong partnerships with the Marine Stewardship Council, Monterey Bay Aquarium, Blue Ocean Institute, Salmon Nation, KidSafe Seafood, and the Green Restaurant Association.
Widmer Brothers Brewing is also committed to reducing its impact on the environment, particularly in regard to water usage. The Portland brewery recently achieved an industry-leading water usage ratio, using just 3.5 gallons of water for each gallon of beer brewed, compared to the industry average ratio of six to eight gallons of water for every gallon of beer brewed. The brewery is also a member of the Oregon Brewshed Alliance, which is a coalition of brewers, craft beer affiliates, and conservationists advocating for the protection of forests and watersheds.

The collaboration Biere de Bambou can be found in limited quantities at all three Bamboo Sushi locations in Portland, as well as the Widmer Brothers Brewery and Pub on N. Russell Street in Portland.
