We’ve recently received a lot of great feedback on our latest Rotator IPA release, Hopside Down IPL. It is also a beer that our brewing team loves, so they used the recipe as the basis for some experimentation. In doing so, they came up with an amazing adaptation that was so good we had to share it.
Downward Spiral is an imperial version of our Hopside Down IPL that was aged for three weeks on medium-toasted new oak spirals.
This big beer weighs in at 9.0% ABV and 84 IBUs. Cascade hops were used late in the boil, then again through dry hopping, giving this beer a huge, citrusy nose. Adding the new oak spiral aging process also lends some oak and vanilla notes to the aroma.
Cold fermenting with our house lager yeast gives Downward Spiral a smooth balance and drinkability, and our proprietary Alchemy hop blend provides a bitterness that doesn’t overwhelm.
