From Trinity:
July is in front us and beers of the summer are atop our tables. Our barrel room is completely finished, we've purchased a new bottling line, and moved a packaging Brite tank next door... all to bring you more bottles of Trinity beer. Success with our 750ml bottles in the market has been more than expected, as it takes much patience to age these beers our supplies are running low! We've filled up close to 90 French oak Chardonnay barrels fpr aging, while waiting for these beers to properly mature we've got some killer draught beers making appearances this month. This Friday, July 5th, the brand new Farmhouse Soleil is being released. Inspired by sunlight, this Saison has a toasty and dry malt profile followed by a surprisingly even body. We switched up the hops on this beer, using American Grown Simcoe producing a passion fruit flavor intertwined perfectly with lemon and lime fruits, while finishing spicy/dry from both a ginger and green pepper corn addition. Making a HUGE statement, we've brewed a new Vert Gueuze in only a weeks time. Gueuze is known for high levels of sourness and extremely long aging times. With some new ideas, we broke all of the rules to bring you a "7 Day Sour." With a warm 3 day Lacto Fermentation followed by a 4 day cool 100% Bretta ferm we literally brewed this beer in 7 days. A high refreshing acidity makes this beer perfect for these hotter days, while the funky Bretta character keeps us all thoroughly entertained. This beer hits taps on Friday July 12th! The following week, we've got another Belgian Saison. Inspired by Dany Prignon and his delicious spiced beers, Farmhouse Fantôme is creamy to palate from adding the starches with yams and pumpkin in the boil. Still very light in body and aged on harvest fresh strawberries, this beer is ever bit satisfying.

Farmhouse Fantô me
Our brewer has been in loose contact with Dany Prignon of the world famous Saison Fantôme. Through this contact we have learned a few secrets about how Fantôme is brewed. Maybe we used some in this recipe of Farmhouse, or maybe we did.... Ok we DID ! We aren't going to say what those secrets are but we will say this Farmhouse was brewed with both strawberries and yams! A very Refreshing patio style Saison.
