Fall Packaged Beer Releases

Join us over the coming weeks as we roll out a host of new packaged beers in cans and bottles—some distributed around the PNW, some available in-house only, some matured over time in our cellars, some packaged up freshy fresh, but all brewed and blended artfully and independently with a nod toward fresh ingredients and fresh thinking.

Fresh Catch
Fresh Hopped Pale Ale

ALSO DISTRIBUTED TO ACCOUNTS AROUND THE PNW

A fresh-hopped pale ale brewed with Willamette Valley Amarillo fresh hops that we picked up at the hop farm hours before adding them to a custom "hop back" tank, which we then pumped hot wort through on its way to the fermenter, extracting vibrant notes of orange marmalade, resinous herbs, and ripe citrus.

Dark Matter
Chocolate Porter

Dark Matter is a dry porter that combines deep, roasty malt character with notes of cocoa and dark fruit from the addition of chocolate to the conditioning tank—a rich blend of flavors that is balanced by a dry finish and gentle malt acidity.

We feel we've never told you the story of this beer—a hauntingly pale ale brewed with extra pale malt, flaked wheat, and oats to produce a smooth, silky body. It's big secret is an assertive late-addition of tropical, citrusy, and piney hops that will awaken your palate and reanimate your soul.

Turbulent Consequence, Viognier
Spontaneously Fermented Ale with Grapes

OCTOBER MONTHLY BOTTLE

Turbulent Consequence, Viognier blends barrels matured for two years in our wild cellar, including a year of maturation on viognier grapes. Turbulent Consequence is brewed using classic lambic methods from the Senne River Valley in Belgium, including a multi-step turbid mash, inoculation with resident flora in our wild cellar’s coolship, and spontaneous fermentation and extended maturation in oak barrels. Mature barrels are then used in various blends throughout the year.

Block 15 Saison with de Garde Oak Aged Spontaneous Ale

Fall Amusement blends a Block 15 saison—brewed with Oregon Mecca Grade Malts, uniquely without the use of any barley—with spontaneously fermented and 2.5 year oak aged wild ale from De Garde. This blend balances pronounced wild character and a nuanced grain profile, offering delightful complexity when enjoyed fresh and the potential for fascinating evolution when cellared.
