Wooden Soul Heliotropic, Brett Saison Aged in Oak Barrels, releases in 375 ml bottles and on draft this week. Straw colored with a copper glow and haze ranging from high to moderate-low, Heliotropic greets you with pronounced aromatics. Expect big vinous, passion fruit, plum, and tropical notes, with a hint of powdery bubble gum and fruit flavor from the original Dupont yeast blending seamlessly with fruity Brett character.
When this beer is fresh out of the barrels its flavors lean more toward tropical fruit, over-ripe fruit and funk. As it ages outside the barrel it becomes more vinous. On the palate, it is dry, waxy, tart and well balanced with fruity Brett flavors and high to moderate carbonation. A great experience at any point along its path, Heliotropic won The Growler magazine's Best Mixed-Culture Beer in its reader-nominated Kind of a Big Deal Awards 2016.
