On tap next week, we brewed this collaboration beer with our friends from Goose Island! It is our take on a traditional Saison, but with a Jeju twist. We incorporated local sancho pepper (similar to Szechuan pepper) and apple mangos. Both are subtle, but help highlight the already peppery and fruity characteristics of the yeast. The apple mangos also add a little acidity to this bone-dry beer. We used Columbus, El Dorado and Cascade hops which, in addition to the obvious but balanced bitterness, add another layer of fruity, spicy and earthy goodness.
