“As a brewer and drinker of beer, I prefer my beer to be balanced so I can enjoy a whole glass… I also like to have each characteristic to be noticeable but not over powering.”
- Liz Chism, Head Brewer
In the case of Ephesus, a Golden Sour Ale Aged in Oak Barrels, Liz describes it as sour but balanced; stone fruit notes, but no fruit added; honey and vanilla notes from the barrel, but not sweet.
Beer Description: Ephesus (7% ABV) was fermented with our house cultures and aged in American oak barrels for one year. Every bottle is corked and capped and we expect it to age nicely. The original intention was to add a stone fruit to the beer, but it became apparent on the first tasting that is was not going to be necessary. The naturally fermented flavors of this beer shine through beautifully on their own.

The rich silky mouthfeel keeps the flavors lingering on the palate. Pour slowly and enjoy in a wide tulip glass.
