It's finally summer a time for session Saisons, hammocks, and long evenings on the patio (oh and the return of a mind-blowing IPA too) ! We've just released a new Saison dubbed the 'Menacing Strawberry, Farmhouse Fraise' and it's an enormous strawberry 'partie.' Brewed with over 400lbs of fresh/whole/hand processed fruit the beer literally pours pink. It is unique in the fact that it's not a sour bomb like most strawberry beers, rather it's balanced with pepper for a dry and spicy finish. 45th Parallel, our 'Oregon-style IPA,' is back on tap, but this beer sells faster than we'll ever be able to brew it! Brewed with burst hopping techniques, Heavy whirlpool hopping, double dry hop ... hop choice is specifically fruity... it's also very light in body and caramel with a very dry finish allowing the fruity hops to showcase....45th Parallel is 80 IBUs and achieve that by using 11 lbs of hops per keg!!!! Friday June 12th marks the date for the next installment in our line of 7th anniversary beers, Magical Brettanomyces Tour #4. This 4th beer in our 'single brett series' features a wild yeast that we've dubbed 'Afro brett,' developed and isolated by our friends at Bootleg biology it's musty and lightly acidic with some apricot fruit ester. Sunday June 21st is the longest day of the year, a fitting day for our double release of 2 collabs with 2 brewers from the sunshine state of Florida. Sauvage Blanc is a white Saison that we crafted with Green Bench Brewing (hailing from St. Petersburg, Fl). Brewed with Sauvignon Blanc 'must,' Grains of Paradise, and whole gooseberries we age this beer on first use French Sauvignon Blanc barrels. Fermented with 50% Brettanomyces naardenensis the recipe palates lightly acidic with some minerality. Saison Beams is a ridiculous beer we crafted with 7venth Sun Brewing out of Dunedin Florida. A surrealistic 'co-loveration' that moves beyond the realm of insanity, it's the most expensive beer we've ever brewed. We added an absurd amount of the rare Asian yuzu fruit and zest in the kettle for a remarkably distinct citrus character. Aged on french oak barrels with Brettanomyces this beer finishes surprisingly dry. Our final beer release for June will be a new Farmhouse beer using an entirely original approach. 'Rind & Pepperberry, Harvest Saison' is constructed with an acidic profile created with watermelon rind (only the white/green part of the melon is used, the sweet part of the melon was used to make chilled gazpacho in our kitchen). Whole black pepper berries balance the acidity of this beer, while the use of a wild Ale yeast adds light pineapple.... R n' P hits the taps on Friday June 26th!
