Trinity Moving from 750ml to 375ml Bottles & New Beer Releases

2014 is upon us all and we don't plan on slowing down a bit !  One of the most visible major changes we are making is a shift from 750ml bottles to 375ml bottles for all offsite.  That transition is happening in March, and if you want a big specialty bottle of one of our beers for your collection or cellar I recommend you find it soon!  There are plenty of interesting surprises in store for the remainder of the new year, but for the purpose of this newsletter I will focus on the month of January.  This Friday, January 10th, Chilly Water Balktik Porter returns on draft only.  Moderate in body, don't let this one fool you ! It's brewed to 8.5% ABV and aged on American oak Bourbon barrels for a provocative dryness and medium toffee.  On January 17th we welcome 2014 with our Cerise Saison Regal.  Pappy Legba (the old creole folk legend known as guardian of crossroads) will be released in both 750ml bottles and draft.  This winter seasonal is brewed with corn, wheat, and oats for a seductively creamy texture while this crimson red Belgian Ale gets 100% of it's color from being aged on cherries.  Our use of grains of paradise in this recipe creates balance and an 'Asian cuisine' sweet and spicy structure; 13% ABV.  Friday January 24th we release another hugggge winter warmer, Passed Stout.  This rich and thick Imperial stout is anything but a typical stout, 'passed' the 11% ABV we this beer is brewed with a huge amount of milk chocolate, Madagascar vanilla beans, and bitter Dagoba Cacao nibbs.  Happy new year to all, with a toast and a cheers!

Chilly WaterChilly Water Baltic Porter.

Not a common style of beer by any means, in fact this style of Porter is a Bottom fermented lager rather than an ale. Traditionally brewed in Northern Europe, this lager had to be strong to keep all the hearty northern souls warm. Again keep in mind this beer is brewed by Trinity and any beer we make will always have an added twist. The twist in this winter seasonal is the choice to age the beer on some rare Mexican wood known as Cauchalalate. This wood imparts a certain dryness accompanied by deep chocolate and coffee flavors. We think this unique wood is the perfect match for the style, and we know you will agree!8.5% ABV


Friday, Jan. 17th Pappy Legba release @ 5pm!

Pappy Legba , Crimson Saison. Brewed with just a touch of flaked maize for a seductive and creamy texture, this red         Saison is undeniably focused on fruit. Post fermentation this special Belgian is aged on a grip of pie cherries, lending it more of a Kriek profile rather than Saison. As Pappy is the guardian of the crossroads, this Imperial Saison releases every January. What beer will you be drinking at your crossroads? 13.0% ABV

Friday, Jan. 24th Passed Stout release @ 5pm!
Passed Stout

Passed Stout, Imperial Stout.  Just in time to keep you warm during the colder monthsof Winter!  It's body is huge, it's dark malt character is huge, it's hop profile is gigantic, and it's ABV is enormous.  It's basically everything you would expect from a noteworthy Imperial Stout and more!!  We age this beer on fresh Madagascar Vanilla Beans, Dagoba Cacao Nibbs, and French Oak.11%ABV
