Who are you guys anyway?

Our first blog entry will explain this a bit more.  To put it simply, Big Ditch Brewing Company are two guys who know quite a bit about chemistry, biology, engineering and manufacturing.  Oh yeah, we’ve also been known to drink a few beers from time to time.  We’ve only been brewing together for a little more than a year, but we’ve picked it up pretty quick we think – judging by the feedback we’ve received…

When will you will be open? 
Sometime before “never” right?

Yes, sometime between now and never is the plan.  But, um, to be a bit more descriptive, we’d like to be open before the end of 2013; but before that would be really, really nice…

Well, I can’t wait that long.  I want to try your beer now dammit!

Easy, tiger.  You see, it’s illegal to sell beer for any sort of profit until the government says so.  And there is nothing quick about getting the required licensing.  However, we have been known to do tastings around town.  Follow us on Facebook and Twitter to find out where we’ll be and you can come see us at one of these tastings!  We appreciate feedback of any sort.  We’re still in the process of developing the recipes, and your feedback could ultimately help decide the final versions… isn’t that awesome?   We think so.

Where will your brewery be located?

We’ve visited several possible locations for the brewery (337 Ellicott St).  There are actually a lot of decent places out there.  Right now we’re waiting to find the best one, at the right time.  We’d really love to be in the city of Buffalo; but we’re also realistic and realize that a better location may not necessarily be within city limits.  We also know that you’ll be willing to come find us to try our beer, no matter where we wind up in the area…!  Rest assured however, we don’t expect to be more than 15-20 minutes from the city, wherever we settle down. 

How big will your brewery be?

Boy, we’ve been asking us ourselves that question for a long time.  Too small, and you can’t meet demand; too big, and you can’t pay your bills.  It’s tricky alright.  After some pretty careful analysis, we’d like our brewhouse to be capable of 3 barrels (or 6 x ½ bbl kegs) at a time, with the possibility of brewing twice in one day and filling a 7 barrel fermentor.  But, to be honest, we wouldn’t mind being a bit bigger… 

Where do you think we’ll be able to get your beer once you’re open?

We plan to be at every great craft beer bar and restaurant in and around Buffalo – which will be a lot of places (there’s more than you think there are, believe us.)  We are also planning on a pretty nice tasting room for you to come grab a sample, or a pint, or three…
