Open-top Fermentation!

Our open-top fermentation room is specifically designed to ferment DreamWeaver Wheat Ale. While these tanks look like huge, foamy glasses of fresh beer, they also serve a purpose. During what is known as “high krausen,” the freshest yeast rises to the top of the tank, creating a frothy head that runs down a spillway into a collection tank. By skimming this yeast, we can reuse it for the next batch of DreamWeaver to ensure the freshest yeast possible for a more pronounced pepper and clove flavor – all hallmarks of our GABF Gold Medal-winning DreamWeaver Wheat.
