Our aim is to open with a number of specialty beers. Some of these beers will be very hop forward. One of them is Space, an India Pale Ale that we brewed a version of before, but under the name Daly Double. This beer is a tribute to a friend that passed away last year. Space was his nickname as a young man and this beer will be a regular offering at our brewery only; our way of keeping him a regular.
The other is Vallejo, an India Pale Ale pulled from the rocky cliffs of your mind. Both Space and Vallejo are pure examples true-to-form of hop thrashers. Hoppy beers are as common as dirty socks. Some may hear the vinyl skipping, but for us hops are the meat of the rhythm that brought us to the show. Hoisting pints of seminal hop screamers from brewers turning out beers with rough tools is what holds our aim and keeps us honest. We salute refinement, but rally around the indulgence of the beast that brought us to the table. Space & Vallejo are raw, naked examples of micro built beers that stick to your ribs.
