Some exciting new brews coming from Southern Tier:
Plums are a diverse group of species, somewhere between 19 and 40 depending on who you ask. We’re only concerned with what we consider the best to brew with– Prunus cocomilia. The Italian plum has beautiful dark skin color and the flesh is perfect for fermentation. We’ll add puréed plums directly to the fermenter where they will add another fermentable component– their residual sugar. The beer will be dry, and have a sweetness derived mainly from the type of malts we use. A bit of the plum flavor will still be present, and it will have a slightly less roasty character than our imperial stouts have had. Hints of plum, hints of coffee from the roasted malt and a thick head.

We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal directions of water, malt, grain, yeast, hops and brewer make the baseline. From there, anything goes. Sometimes the journey is as important as the destination.

Keeping in the tradition of the 19th century California brewers, we use a lager yeast to ferment 2xSteam. Historically, this style is fermented at higher temperatures than a typical lager and that is just how we’re brewing our version. The birth California Common style is rooted in the Victorian age. We use the technology of today to replicate what may have been, much like steampunks. Of course in that way, we have to twist things up a bit. As is with our 2x line of beers, 2xSteam is turned up a few clicks to be over 8% abv. An unusual take on an unusual style.
