Every last crumb. Er, drop.

The idea started with dessert, of course. Innovation brewer Nick Ison was visiting Willett Distillery in Kentucky. Martha, one of the family owners at Willett, gave Nick a fresh slice of bourbon chocolate pie — and he nearly wept. How can I put this euphoria into a beer?

Pecan Pie, part of our Trip in the Woods series, is a decadent brew crafted from scratch like the best homemade treats. First we aged an Imperial stout for more than two years in bourbon barrels. Then Nick took over our Big Room kitchen, loading pecans "one baking sheet at a time and toasting them" — until the pile was 400 pounds!

The toasted pecans, along with whole vanilla beans, went right into our custom dry-hopping device, the Hop Torpedo. For three straight days the barrel-aged beer flowed out of a tank, surged through the Hop Torpedo, and back into the tank to supercharge the flavors.

Pecan Pie serves up rich notes of chocolate, vanilla, and caramelized pecans, with a smooth sweetness woven through the beer's creamy texture. We're shipping Pecan Pie to approved states*, and this limited release is only available while supplies last.
