Jester King Releasing 2022 Hibernal Dichotomous

We're excited to announce the release of 2022 Hibernal Dichotomous! Our Dichotomous series seeks to create flavors and aromas tied to the season in which they're created using seasonal ingredients and naturally occurring yeast. zzubreebym

For 2022 Hibernal Dichotomous, we created a barrel-aged blend of wild beer, which included a portion aged in Mezcal barrels. We then took winter beets and fire-roasted them in-house at Jester King Kitchen. Prior to roasting the beets, we packed them in spent coffee grounds from our friends at Figure 8 Coffee Purveyors.

We love working with native yeast, seasonal ingredients, and new culinary techniques to create unique flavors and aromas. We feel we've created a beer singular to the winter season, the Texas Hill Country, and the creative prowess of our brewers and chefs to share with you. We hope you enjoy this special creation tied to time, place, and people. 5.8% abv.

OMNISCIENCE & PROSELYTISM BATCH NO. 9

We're excited to release Batch No. 9 of Omniscience & Proselytism! Omniscience & Proselytism (or "O&P") is our blend of mature, barrel-aged farmhouse ale, re-fermented with fresh-picked strawberries from KH Farm in Poteet, Texas!

Our core philosophy is taking the natural ingredients around us (aquifer water, Texas grain, local produce, native yeast) and presenting them through the "magic" of fermentation. Fermentation has a unique ability to create new and exciting flavors and aromas through a natural process that's impossible to exactly reproduce. Seeing for instance how the seasonal harvest of Hill Country strawberries presents each year after transformation through fermentation is one of the things we find most exciting and look forward to the most when it comes to beer making. Strawberries in particular go through quite a metamorphosis as they ferment with native yeast.

We're quite pleased with this year's results and hope you enjoy them. A lot of love went into making O&P, as we hand-processed all the strawberries in-house at Jester King.

2022 BALCONES BOURBON BARREL-AGED MODERNE DANSK

We're excited to announce the release of 2022 Balcones Bourbon Barrel-Aged Moderne Dansk!

We created a blend of mature farmhouse ale aged in neutral oak wine barrels for about a year, re-fermented the blend with Danish Stevnsbær cherry juice from the renowned Frederiksdal Kirsebærvin, then barrel-aged the blend for another year in Bourbon barrels from our friends at Balcones Distilling in Waco! This two-year-old project involved natural ingredients from our land and state (well water, Texas grain, native yeast), juice from our favorite cherries in the world, and decadent Bourbon barrels from one of the best distillers around. The results are quite special in our opinion. We hope you enjoy!
