We're happy to announce the return of SPON Shiso & Fuyu Persimmon! This is three-year-old spontaneously fermented beer from the winter of 2019 (Jester King coolship season no. 7). We created a soft, mellow blend and re-fermented with Texas Fuyu Persimmons grown in Mexia, Texas to the east of Waco. We then added Japanese Red Shiso before bottling.

SPON Shiso & Fuyu Persimmon is bright, refreshing, and tangy with a subtle earthiness from the Shiso. 100% spontaneously fermented with native yeast and naturally conditioned. 6.0% abv. zzubreebym

Batch two of Citrus Foot Direct out now! This is our Farmhouse IPA fermented with Oranges and Mandarin.

To make Citrus Froot Direct, we mashed with well water and a base of Wildfire Pale Malt and San Jacinto 2-Row from TexMalt. We kettle hopped with Idaho 7 and dry hopped with Simcoe, El Dorado, and more Idaho 7. We fermented in stainless steel with our mixed culture. During fermentation we added juice and zest from oranges and mandarins hand-processed by our brewing team. Naturally conditioned. 6.7% abv.

We're excited to simultaneously release two new SPON beers — 2022 SPON Raspberry & Cherry and 2022 Blackberry & Cherry! Both are a blend of mature, barrel-fermented 100% spontaneously fermented beer. Following a few years of maturation and blending, we refermented the blends with raspberries and cherries and blackberries and cherries respectively.

Stemming back to our love and appreciation of authentic-Belgian Lambic, as well as aged hops, we consider SPON to be a wonderful base for fruit fermentation. It's also hard to go wrong with adding copious amounts of raspberries, blackberries, and cherries to the beer. We hope you enjoy these two classically-inspired fruit beers from Jester King!

2021 BLANC DU BOIS

We're very excited to release our first wine from last year's Texas grape harvest — Jester King 2021 Blanc du Bois! Our 2021 Blanc du Bois is made from 100% Blanc du Bois grapes grown in Sulphur Bluff, east of Dallas. We received the grapes last August and fermented on skins for about a month, yielding an orange wine. Fermentation was started by pitching our mixed culture — the same one we use to ferment our farmhouse beer. We then pressed the grapes and aged the wine in neutral oak barrels for about five months. Finally, we blended and bottled without the addition of any sulfites or other preservatives. Our 2021 Blanc du Bois is just grapes and our mixed culture — nothing else added or removed.

We love the fruity, tropical character of Blanc du Bois and have been using it for years in our beer. We're really excited to have finally made wine with it. Blanc du Bois is a hybrid grape developed in Florida. It does well in our hot Texas climate and is resistant to Pierce's Disease. By no means a sparkling wine, expect a little bit of natural carbonation in the bottle through continued refermentation. 9.2% abv.

As we mentioned, this is our first wine from the 2021 harvest. This is also from our second year of making wine, with 2020 being our first year. As a refresher, it became legal in 2019 for us to make wine and beer under the same roof at Jester King. Natural winemaking in our experience has many similarities to making barrel-aged beer refermented with fruit, so we were eager to start a wine program at Jester King. Our own vineyard is about four years old and is slowly maturing, with the goal of making estate wine at Jester King in the years ahead.

2021 AFIELD CINSAUT

We're excited to announce the release of Afield — our 2021 Cinsaut wine made in collaboration with our friends at Field Recordings Winery in Paso Robles, California, and American Solera Brewery in Tulsa, Oklahoma!

For Afield, we took 100% 2021 Cinsaut grapes grown in the California Central Coast and had them undergo carbonic maceration (fermenting the grapes from the inside out using natural CO2 pressure). Interestingly, the carbonic maceration took place in transit! The grapes were sealed upon shipment to Texas, and spontaneously fermented during their journey in the presence of native yeast. After we received the grapes at Jester King, we pressed them and racked the wine to neutral oak for about four months. We then blended and bottled without the addition of any sulfites or other preservatives. Afield is just Cinsaut grapes and native yeast, nothing else. 8.8% abv.

AUDIO PALETTE

The 16th annual American Craft Beer Week is now through May 22 We have three exciting releases this week, and we're kicking things off with the re-release of Audio Palette — our spelty farmhouse ale with American hops, brewed in collaboration with Stillwater Artisanal.

For the re-release, we brewed with well water, Texas-grown 2-row barley, malted spelt, and Idaho 7. We fermented in stainless with our mixed culture and dry-hopped with Mandarina Bavaria, Huell Melon, and Cashmere. Unfiltered and naturally conditioned. 6.8% abv.

We are happy to announce the re-release of Jester King Italian-style Pilsner! Our Italian-style Pilsner is brewed with Eraclea Pilsner Malt and Hallertau Mittelfruh hops.
