Tart red raspberries are the star of this refreshing fruit gose. A first fermentation with lactobacillus provides the pucker, while a second pass in an open fermenter produces soft, fruity esters. A hint of Himalayan pink salt amplifies the flavor of tart raspberry jam, and coriander adds notes of delicate wildflowers. We taste: tart raspberry jam, wildflowers, hint of salt.
