August Schell Brewing Company Introduces Latest Edition of Handcrafted Noble Star Collection: Cypress Blanc

NEW ULM, MN (Apr. 29, 2015) – August Schell Brewing Company is releasing its latest entry in the Noble Star Collection of specialty Berlin Weiss style sour beers, Cypress Blanc, which rolls out to select Minnesota retailers this week.

The development of the Noble Star Collection has allowed the 155-year-old brewery to explore a variety of high-end, small batch, handcrafted beers based on the Berliner Weisse style and aged in historic 1936 cypress wood lagering tanks. For nearly 60 years, these now-rare tanks were used almost exclusively for the production of Deer Brand, Schell’s classic American lager. As a nod to this history, Schell’s brewed an experimental American lager to be aged in the cypress tanks once again, but this time, made in the traditional Berliner Weisse fashion. The result is unlike anything brewed by Schell’s in its 155 years of operation.

“Cypress Blanc is lighter bodied and very dry with a uniquely complex flavor profile and a pleasantly tart acidy that is totally different than anything that would have been aged in these tanks before,” said Jace Marti, Schell’s assistant brewmaster and sixth generation member of the Schell’s family. “For an even more unique touch, we then transferred it onto a brand new German hop variety called Hallertau Blanc to give it a touch of citrusy hop flavor and aroma that complements the fruity flavors from the brettanomyces.”

“The defining characteristics of Cypress Blanc are its refreshingly dry, acidic character, its funky and fruity hop aroma, and its lively carbonation,” adds Marti. “This beer is extremely food friendly, and can be paired in many different ways. Try pairing it with something sweet to balance the sourness of the beer.”

As with all of Schell’s Noble Star lineup, Cypress Blanc is unfiltered, hand-filled and bottle-conditioned to allow its flavors to continue to develop and evolve in its 750ml champagne bottle. It boasts a 7.4 percent ABV and just four IBUs. Learn more at www.schellsbrewery.com.
